Spicy Prawn and Buckwheat Noodles

Ingredients:

150 grams raw king prawns, shelled and deveined

100 ml of chicken stock

75 grams soba (buckwheat noodles)

75 grams green beans, chopped

50 grams kale, roughly chopped

40 grams celery, trimmed and sliced

20 grams red onion, sliced

5 grams lovage or celery leaves

1 bird’s eye chili, finely chopped

1 garlic clove, finely chopped

2 teaspoons extra virgin olive oil

2 teaspoons soy sauce (or tamari, if you cannot eat gluten)

1 teaspoon fresh ginger, finely chopped

Directions:

Heat a frying pan using the high setting.

Cook the prawns with a teaspoon of soy sauce/tamari and a teaspoon of olive oil for about 2 to 3 minutes.

Transfer the cooked prawns, and wipe clean the frying pan for later use.

Boil the noodles as directed on the packet, or for no less than 5 minutes, but not more than 8 minutes.

Drain the noodles, and set aside to let them cool down.

Fry all the vegetables and greens except for the lovage/celery leaves using the remaining oil over medium-high heat for 2 t0 3 minutes.

Pour the stock into the fried vegetables.

Bring the contents of the frying pan into a boil.

Lower the heat, and let it simmer for 1 to 2 minutes, or until everything has been cooked through but not soggy.

Add the cooked prawns, cooled down noodles, and lovage/celery leaves into the pan.

Bring the contents of the pan back to a boil.

Remove the pan from the heat.

Arrange in bowls, and serve.
